Cat 259b, White smoke

I have a cat 259b with 750 hrs. This past summer every couple of weeks it starts plowing white smoke then runs fat and eventually choakes itself out. I have drained tank, checked injectors replaced fuel filter multiply times any thoughts. By the way every time I take to the mechanic it runs fine.
